The Kitchen

Our talented kitchen team is led by Executive Chef Tommy Shafer, who has developed culinary programs for many notable restaurants such as Salt and Smoke of St. Louis, Blue Duck and Blue Violet of St. Louis, and of course Publik House of Peoria Heights.

His experiences in recognized restaurants all over the Midwest have fueled a passion for food that he is excited to develop at Black Band. “I am excited to share something new with Peoria. Who wouldn’t want to cook for a distillery that produces the best bourbon around?”

Tommy’s cooking style emphasizes seasonal and local produce with dishes that reflect Southern and Midwestern culinary techniques for The Bar at BLACK BAND.
